সুন্দরবনের মধুর অন্যতম বৈশিষ্ট্য হচ্ছে- একটু ঝাঁকি লাগলেই প্রচুর পরিমাণে ফেনা হয়ে যাবে। তবে শীতকালে ফেনা হওয়ার প্রবণতা কম দেখা যায়।
সুন্দরবনের খাটি মধু আমরা কখনই জমতে দেখনি। হোক সেটা ফ্রিজের ভেতরে বা বাইরে।
এই মধুর আরেকটি বড় বৈশিষ্ট্য হচ্ছে- হাতে চাক কাটা পদ্ধতিতে সংগ্রহ করা মধুর উপরে হলুদ রঙের পোলেন জমা হয়। এটাকে অনেকে গাদ জমা বলে থাকেন।
